Why We’ve Moved Away from Labels on Our Olive Oil Packaging

At Great Southern Groves, we’re always looking for ways to reduce waste and make more sustainable choices in how we package our extra virgin olive oil.

One small change that makes a big difference? Moving away from adhesive labels.

Most labels are supplied on a silicone-coated backing paper. While it does its job in production, this backing is not recyclable and goes straight to landfill. It’s a hidden waste stream that most people never see, but for every single label applied, there’s an equivalent strip of backing discarded behind the scenes.

By switching to preprinted packaging, we’ve eliminated that waste entirely. No labels, no backing, no unnecessary landfill.

It’s a simple shift, but one that aligns with our commitment to more sustainable olive oil production here in Australia.

Should Olive Oil Be Refrigerated? A Guide to Storing Extra Virgin Olive Oil

Many people wonder whether olive oil should be refrigerated to keep it fresh. It’s a common question, especially for those investing in premium quality, Australian extra virgin olive oil.

The short answer is no, olive oil does not need to be stored in the fridge. In fact, refrigeration can sometimes create unnecessary complications. Understanding how to store olive oil properly will help preserve its flavour, freshness and nutritional benefits.

Why Olive Oil Doesn’t Need Refrigeration

Extra virgin olive oil is naturally shelf stable. Unlike many fresh foods, it contains very little water, which means bacteria and mould cannot easily grow. For this reason, olive oil has traditionally been stored in pantries and cupboards around the world.

The ideal storage temperature for olive oil is between 14–18°C, which is similar to the temperature inside most kitchen cupboards and when stored correctly, quality olive oil can stay fresh and flavourful for many months.

What Happens When Olive Oil Is Refrigerated?

When olive oil is placed in the fridge, the cold temperature causes the oil to solidify or become cloudy. This is completely natural and happens because some of the natural waxes and fatty acids begin to crystallise. The oil will return to its normal liquid state once it warms up to room temperature.

While refrigeration does not damage olive oil, it can be inconvenient because the oil becomes thick and hard to pour. Frequent temperature changes of moving the oil in and out of the fridge may also affect the oil’s texture over time.

The Three Enemies of Olive Oil

Rather than refrigeration, the most important factors affecting olive oil quality are:

Light: Exposure to light accelerates oxidation and can quickly degrade flavour.

Heat: High temperatures break down delicate flavour compounds and beneficial antioxidants.

Oxygen: Contact with air slowly oxidises the oil.

Protecting your olive oil from these three elements will help maintain its freshness.

The Best Way to Store Olive Oil at Home

To keep your olive oil in peak condition, follow these simple guidelines:

  • Store olive oil in a cool, dark cupboard
  • Keep the lid tightly sealed
  • Avoid placing bottles next to the stove or oven

Small bottles, used regularly are ideal because they minimise the amount of time the oil is exposed to oxygen.

Storing Your Bulk Olive Oil

Only decanting what you need for the week and then protecting the rest of the oil from light and minimizing air exposure.

How to serve brine-cured, Australian Table Olives at Home

Did you know the mixed olives you buy from Great Southern Groves are the very same olives we supply to our hospitality customers each week? Now you can bring that restaurant style experience straight to your table at home.

Because our olives are naturally brine-cured (just salt and water, no preservatives), it’s important to give them a quick rinse under cold water before serving. This removes excess salty brine and allows the true olive flavour to shine.

How to Enjoy Your Brine-Cured Olives

Keep it simple
Rinse, drizzle with Australian extra virgin olive oil (EVOO) and serve at room temperature. Perfect for grazing boards, cheese platters or a savoury snack.

Add your own flavours
Try orange zest and fennel seed, or lemon zest, rosemary, garlic and chilli. Always with a finishing drizzle of extra virgin olive oil. They make a delicious addition to your antipasto platter.

Warm them to impress
Gently heat rinsed olives in EVOO with citrus peel or herbs for a few minutes. Serving olives warm enhances their aroma and flavour. This is how many of our restaurants serve them and they taste amazing!

At Gibney in Perth, Head Pastry Chef Richard Dormer has brought together exceptional ingredients to create a truly memorable dessert called the Millionaires Sundae.

House-made gelato, crafted from Bannister Downs milk and cream and infused for 24 hours with Norohy Madagascan vanilla, is churned daily for a silky, light texture. The dish is finished with Great Southern Groves ‘Prima’ Extra Virgin Olive Oil, our limited release, olio nuovo.
